Herbes de Provence is a mixture of dried herbs typical of the Provence region of South East France. Herbes de Provence used to be just a descriptive term meaning quite literally, herbs from Provence; it was not until the 1970s that blends of herbs started to be sold under this name. The mixture typically contains savory, marjoram, rosemary, and thyme; oregano and sometimes bay or fennel are also added - lavender is generally believed to be an American addition to the recipe.

Our Herbes de Provence is great ground over grilled fish and meat as well as in vegetable stews. The mixture can be added to foods before or during cooking or mixed with olive oil prior to cooking. Dried herbs are rarely added after cooking is complete.
We think this is the most wonderful recipe for Herbes de Provence and can't understand why the French didn't include lavender originally!
